Texture Profile Analyzer (TPA) is a double compression test procedure for measuring the textural characteristics of food materials. It is also used in other parts of industries, like gels, pharmaceuticals, , and personal care.
Throughout a TPA tests, a texture analyzer ( mainly tensile/compression tester) compress the samples twice to provide insight into how samples behave when consumer chew them. The TPA test was also called the “two bite test” for the reason that, the texture analyzer test machine simulate the mouth’s biting activity.
